Guizhou Spicy Chicken Hotpot Recipe

Guizhou Spicy Chicken Hotpot Recipe

raw material:

300 grams of chicken wing middle section, 50 grams of dried chili pepper, 1 tablespoon of peppercorns, 15 grams of green onion, 15 grams of ginger, 15 grams of garlic, 1 tablespoon of Shaoxing wine, 1 tablespoon of soy sauce, 1 teaspoon of sugar, and appropriate amounts of salt, MSG, and sesame oil.

practice:

1. Wash the chicken and chop it into small pieces; cut the dried chili into sections; cut the onion into sections, smash the ginger into pieces, and slice the garlic.

2. Marinate the chicken with Shaoxing wine, sugar, salt, scallion and ginger for at least half an hour.

3. Place the wok on high heat, pour in half a pot of oil, and when it is 50% to 60% hot, fry the chicken. Fry the moisture on the surface of the chicken dry. When the chicken shrinks and turns golden yellow, remove from the pan, drain and set aside, and remove the scallion and ginger.

4. Leave 4 tablespoons of oil (about 50 grams) in the wok and heat it to 50%. Add dried chili segments, peppercorns, onions, ginger, and garlic and stir-fry until fragrant. Immediately add the chicken pieces and stir-fry evenly. Add soy sauce, a few drops of sesame oil, and finally add MSG and stir-fry evenly before serving.

Dawnrain: Don't cut the chicken pieces too big, otherwise it will be difficult to taste; if it is fried too dry, it will not taste good; add the chicken pieces when the dried chilies and Sichuan peppercorns are just fried and fragrant, and be sure not to burn them; increase or decrease the amount of dried chilies and Sichuan peppercorns according to your taste.
