How to cook braised pork with dried bamboo shoots

In today’s society, with so many food ordering apps available, how many people are willing to cook their own meals? Ordering food online is convenient, but in the long run, your health will disappear. So, throw away your laziness, get into the kitchen and start practicing. Maybe you still need to learn from me how to make pork with dried bamboo shoots.

1. Wash the pork trotters and boil them in boiling water for 15 minutes. Remove them from the water and wash off the foam. Let them dry (or use kitchen paper to absorb the surface water). Soak the dried bamboo shoots in hot water until soft, rinse them and soak them in warm water for 3 hours. Drain the water and set aside.

2.1 Cut the pork shank into suitable thickness (about 1.5 to 2 cm) and use a brush to apply the sauce on both sides and around the sides (brush the leather surface twice)

3.2 Honey soy sauce (do not use dark soy sauce as it is too dark) is mixed into a sauce for skin application

4.1 Put the fried pork trotters into warm water to soften (for easier cutting)

5.2 Heat the oil in a pan until it is 70% to 80% hot, then fry the pork trotters with the sauce (it is best to use a strainer to separate the bottom of the pan to avoid burning). Fry both sides.

6. Slice the ginger and tie the green onions together for later use

7. Put some ginger slices, star anise, bay leaves, and amomum villosum (clean the spices) into the marinade column

8. Put the marinade into a cold water pot (more water), boil for 20 minutes (sweep off the foam while boiling), add rock sugar, light soy sauce, dark soy sauce, MSG, chicken essence, salt for seasoning, put in the soaked dried bamboo shoots and cook for a while (bamboo shoots are easier to absorb the flavor), remove and keep the juice

9. Cut the pork shank skin side down into rhombus-shaped pieces (do not cut through the skin) and place them in a bowl. Place bamboo shoots on top, pour the remaining juice on top, add ginger slices and scallions, cover with plastic wrap for 2 hours, and steam in a steamer for 3 hours.
