4.1 Pour 1 spoon of dark soy sauce, 2 spoons of cooking wine, a little vinegar, add seasoning and then pour in the peeled chestnuts, stir-fry quickly for two minutes

5.2 After the pan is hot, pour in oil and add sugar. Put the sugar in the pan and stir constantly with a spatula over low heat until it dissolves into a golden color (that is, when bubbles begin to appear); then pour in the chopped pork belly and stir-fry quickly and continuously until the pork belly is coated with sugar and turns golden. At this time, add the ginger slices and stir-fry. (Stir-fry quickly, otherwise the meat will burn)

6. Pour hot water into the pot until it covers the pork belly and chestnuts. Cover the pot and bring to a boil over high heat, then simmer over low heat for about 1 hour.

7. When the sauce is almost thick, stir-fry the chestnuts and meat over low heat for 30 minutes and sprinkle a little salt. When the sauce is almost thick, turn up the heat and add more.
