one. Steamed Dried Salted Fish

Ingredients: dried salted fish, pork fat, onion, ginger, dried red pepper, cooking wine, extremely fresh soy sauce, chicken essence, etc.

1. Rinse a dried salted fish weighing about 400 grams with clean water and soak it for 3 to 5 minutes to soften it. Cut off the head and tail of the soaked salted fish, cut it in half from the middle, and then cut it into pieces about one finger wide.

2. Peel the scallion and ginger, wash them, and cut them into chopped scallions and ginger slices respectively. Remove the stems of the dried red peppers, wash them, and cut them into pepper segments. Rinse the pork belly with warm water, cut off the fattier piece with a knife, and cut it into fat slices of even thickness.

3. Put the chopped salted fish into a sand bowl, because the elders said that the salted fish steamed in a sand bowl tastes good. Then place the fat slices evenly on top of the fish pieces.

4. After arranging the fat slices, add the chopped green onion, ginger slices, and dried red pepper segments in turn, and pour in appropriate amount of cooking wine and extremely fresh soy sauce. Because the fat slices will release oil during the steaming process, there is no need to add vegetable oil.

5. Add enough water to the steamer, place the sand bowl with salted fish on the steaming curtain, cover the pot and steam over medium high heat for 30 minutes, then turn off the heat, take out the steamed salted fish, add a little chicken essence and stir well.

2. Steamed Salted Fish

Ingredients: 1 piece of dried salted fish

Ingredients: a little white sugar, appropriate amount of ginger slices, and appropriate amount of cooking wine.

Production steps:

1. Rinse the dried salted fish with water and drain

2. Cut it into small pieces with a knife and place on a plate

3. Add appropriate amount of ginger slices

4. Add appropriate amount of water

5. Steam for 4 minutes

6. Take out the steamed water and remove the saltiness of the dried fish.

7. Then add a little sugar

8. Pour in an appropriate amount of cooking wine

9. Steam for another 5 minutes and it is ready to eat.
