What to stir-fry with Enoki mushrooms

What to stir-fry with Enoki mushrooms

Ingredients for cold-mixed enoki mushrooms: 1 handful of enoki mushrooms, 1 cucumber (root), 1 red pepper, 1 spoon of vinegar, appropriate amount of green onions, half a garlic, 1 large cup of water, 1 spoon of olive oil, a little white sugar, and appropriate amount of chili sauce.

1. Use scissors to cut off the root part of the enoki mushroom, and then rinse it repeatedly. Longer enoki mushrooms can be cut in the middle for easier eating; remove the seeds from the red pepper and cut into thin strips.

2. Add water and 1 spoon of salt to the pot. Bring to a boil, then add enoki mushrooms and shredded red pepper. Cook for 1 minute and turn off the heat. Enoki mushrooms are easy to cook in just 1 minute. If you cook them for too long, they will get stuck in your teeth.

3. Soak the enoki mushrooms and red pepper shreds in the prepared cold boiled water. After the enoki mushrooms have cooled down, pick them up and drain them - it is best to squeeze the enoki mushrooms to dry out some of the water.

4. Chop the garlic and onion, add 1 spoon of balsamic vinegar, 1 spoon of olive oil and a little sugar, mix well and set aside.

What can be fried with Enoki mushrooms to make it delicious?

5. Peel and shred the cucumber - Because cucumbers easily release water, when preparing this dish, we cut the cucumber at the end and mix it as we eat.

6. Mix the enoki mushrooms, red pepper shreds, cucumber shreds and the juice prepared in step 4. If you like strong flavors, you can add some chili oil or chili sauce.

Scrambled Eggs with Enoki Mushrooms

Ingredients: appropriate amount of eggs, appropriate amount of enoki mushrooms, appropriate amount of salt, appropriate amount of chicken essence, appropriate amount of green onions, and appropriate amount of vegetable oil.

Ingredients: 100 grams each of enoki mushrooms and pine mushrooms, 1 piece of tofu, 80 grams each of sauerkraut and vermicelli, and appropriate amounts of chopped coriander and salt.

1. Cut the tofu into small pieces, blanch it in boiling water, and then cool it in cold water; soak the enoki mushrooms and pine mushrooms in water until soft, and remove the stems; soak the vermicelli in water until soft, and cut it into 20 cm long sections; cut the sauerkraut into thin strips.

2. Place the pine mushrooms on the bottom of the casserole, then add vermicelli, sauerkraut, tofu, and finally the enoki mushrooms.
