1. Century Egg and Lean Meat Porridge:

Ingredients: rice, preserved eggs, fried dough sticks, pork, and green onions. Seasoning: salt.

Method: 1. Wash the rice first, then put it in a container, add appropriate amount of salt and water and soak it for a while, about half an hour; peel the preserved egg and cut into small dices; cut the fried dough sticks into dices of the same size; chop the green onions.

2. Wash the pork, put it into the pot and cook it. No need to cut it, just take a small piece and cook it directly. No need to season it. After it is cooked, take it out and let it cool, then tear it into shreds with your hands. Of course, the meat put into the preserved egg porridge can also be pre-marinated bacon.

3. Take a soup pot, pour in clean water and bring to a boil, then put in the soaked rice, followed by the shredded pork and some diced preserved eggs. After boiling, turn to low heat and simmer slowly. If time and patience permit, it is best to simmer for about an hour, until the porridge is soft, sticky and thick. If you don't insist on these, then it's ok to cook until the rice is cooked, which is also delicious. Finally, add some salt to taste, and sprinkle the green onions, fried dough sticks, and the remaining diced preserved eggs into the porridge when eating.

2. Seafood Wonton Noodles:

Ingredients: instant noodles (longxu noodles are best, I happened to have instant noodles at home so I used them), wontons (you can make them yourself or buy ready-made), prawns, rapeseed, broth (bone broth or chicken broth), seaweed, shiitake mushrooms, green onions, and dried shrimps. Seasoning: salt, chicken powder, pepper, sesame oil.

Method: 1. Peel, de-head and remove the intestinal thread of the prawns, leaving the tail to make them look better. Wash the processed prawns; wash the rapeseed heart; soak the mushrooms, and if you are in the mood, make a cross cut to make the bowl of noodles in front of him more beautiful; wash and chop the green onions.

2. After all the ingredients are prepared, take the soup pot, add appropriate amount of water, bring to a boil, then put in noodles and wontons, and take them out after cooking. I used instant noodles, which can be taken out after cooking for a while. Since it is summer now, the cooked noodles can be rinsed with water.

3. If you have stock, the taste will be better. Now you can boil the stock in another pot. If you don’t have stock, you can use the soup used to cook the noodles. After boiling, add shrimps, mushrooms, dried shrimps, seaweed, rapeseed, and then add pepper, salt, chicken powder, and sesame oil to season. Finally, put the wontons and noodles into the seasoned soup and sprinkle with chopped green onions.

3. Minced meat pancake:

Ingredients: 1 portion of boiling water dough (the method of making boiling water dough is attached below) Filling: minced meat, chopped green onion, pepper and salt (you can also add a small amount of dried shrimp).

Method: 1. Mix the minced meat, chopped green onion, pepper and salt evenly; knead the boiled water dough evenly and roll it into long strips.

2. Divide the rolled strips into several small portions, roll them into round dough sheets, use a spoon to spread the meat filling evenly on the round dough sheets and roll them up.

3. Roll it into a long strip and then into a snail shape, flatten it slightly, and gently knead it. The minced meat pancake is ready.

4. Make all the pancakes in turn, fry them in a frying pan, or bake them in an oven at 200 degrees.

4. Boiling water dough method:

Ingredients: 300 grams of all-purpose flour, 150 grams of boiling water, 60 grams of cold water.

Method: 1. After sifting the flour, pour boiling water into the flour, and use chopsticks to mix the flour and boiling water into coarse particles.

2. Rub with your hands.

3. Add appropriate amount of cold water.

4. Knead the cold water into the dough completely.

5. After the dough has rested, the smoothness of the dough changes significantly. You can then use a rolling pin to shape it into various boiled water noodles.
