How to make oil-splashed noodles

1.1 Prepare other ingredients for later use.

2.2 Prepare 200 grams of flour.

3.1 Cover the dough and let it rest for a long enough time, at least 20 minutes, so that it will be easier to stretch the dough later.

4.2 Add appropriate amount of water to the flour and knead it into a "slightly soft" dough. Add a small amount of corn oil and continue kneading until all the corn oil is kneaded into the dough (adding 1 egg and a small amount of salt to the dough can make it more chewy).

5.1 Cut into wide strips with a knife.

6.2 Roll the dough into an oval shape.

7.1 After the water boils, add a little salt and put in the noodles.

8.2 Pick up both ends of the noodles and stretch them. My experience is to start stretching the noodles while preparing to boil water, so that you won’t be in a hurry when cooking the noodles later (the noodles on the right in the picture are stretched, which can be compared with the unstretched noodles on the left).

9. Put the washed spinach into the noodle pot and blanch it.

10. After removing the spinach from the water, rinse it with cold water and place it in a large bowl for later use.

11. Remove the seeds from the green onion, coriander and chili and chop them into small pieces (I was afraid it would be too spicy, so I removed the seeds and only put in half a chili, but the taste was too bland. It tastes better when it’s spicy).

12. After the noodles are cooked, rinse them with cold water and place them on top of the spinach.

13. Sprinkle black sesame seeds, chopped green onions, Sichuan peppercorns, chili peppers and salt on the cooked noodles.

14. Pour a spoonful of hot oil on the noodles, add aged vinegar, mix well and start eating! !
