1. Wash the kale, peel it and cut off the excess roots. Peel the potatoes and cut into not too small pieces. Wash the mushrooms and cut in half or quarters. Chop ginger, garlic and scallion.

2. Add a little oil to the pan and sauté ginger, garlic and scallion until fragrant.

3. Then add the kale and potatoes and fry until the kale starts to change color.

4. Add vegetable broth until it covers 70% to 80% of the ingredients. Add coconut milk and curry powder. Keep boiling for 10 minutes, until the potatoes start to soften.

5. Add mushrooms to the pot and cook over medium heat until the sauce thickens.

6. Don’t let the juice dry up, it’s great for mixing with rice. Finally, sprinkle with chopped coriander and some pomegranates. Serve with a slice of lime.
