When marinating, I used some German-specific roast pork spices, salt, red champagne, brandy, onions, celery, and a few cloves inserted into the elbow. Marinate for 3+ hours, I left it overnight. Add soy sauce, dark soy sauce and star anise when cooking. Cold water to cover the elbows, a whole shallot, garlic cloves and a little beer.

10. Open the oven from time to time to check if the temperature is just right. Cover the burnt areas with tin foil.

11. Finished product ~ The only drawback is that the skin is not crispy enough. I guess it's because the cooking time was too long and the baking time was too short. Moreover, the meat was broken into pieces when I pierced it with a fork, and it was no longer a whole elbow. It doesn’t look good, but it’s still delicious.
