1. Dice the pork belly, separate the fat and lean meat.

Pour in diced onion and fry slowly until fragrant. Then pour in appropriate amount of rock sugar and slowly simmer the onion until soft. This process requires great patience, slowly frying the onion until it is browned and softened.

6. Add nutmeg, orchid oil, dark soy sauce, light soy sauce, and a few drops of vinegar, stir-fry evenly, then pour in enough water to cover the meat, bring to a boil over high heat, remove the foam, then add in the boiled eggs and simmer over low heat for 3 hours.

7. Taste before serving and add appropriate amount of salt. Sprinkle with chives before eating to reduce greasiness. Paired with some stir-fried vegetables, it makes a very nutritious meal. Of course, you can also eat it directly on top of rice.
