How to make egg yolk crisps and ingredients

Egg yolk pastry is a common specialty snack, and its preparation method has some similarities with egg yolk mooncakes. The more traditional way of making egg yolk pastry is to use lard. Nowadays, many people don’t like to eat lard, so lard can be replaced with butter, which can be bought in supermarkets. When you make egg yolk pastry at home, although there are a lot of steps, the process is still quite enjoyable.

Ingredients:

Medium gluten flour, low gluten flour, egg yolk

Production steps:

1. Oil skin: 300g medium-gluten flour, 100g lard, 105g white sand, 4-5 spoons of water. After sifting the medium-gluten flour, add lard, sugar and water and knead evenly until the surface is smooth and not sticky, put it in a fresh-keeping bag and let it stand for 30 minutes;

2. Shortening: 250g low flour, 120g lard. After sifting the low flour, add lard and knead evenly until the surface is smooth and not sticky, then divide into pieces of about 12g each, about the size of a spoon.

3. While waiting for the dough to relax, divide the purchased red bean paste into 25g/pieces, and wrap half a salted egg yolk in each portion of red bean paste, and wrap them all up;

4. Roll the relaxed dough into long strips, divide into 20g/piece, flatten the dough, wrap with 12g of oil puff pastry, and roll into a ball with the closed end facing upwards. Take 1 portion of puff pastry and roll it into the shape of a beef tongue

5. Roll the dough into a tube with the seam facing upwards, and relax for 15 minutes; roll the relaxed dough into a long strip of ox tongue, roll it into a small tube with the seam facing downwards, and relax for 20 minutes;

6. Take a piece of relaxed puff pastry, with the seam facing upwards, press down with your fingers in the middle to tighten the puff pastry into a ball, then roll it into a round shape; fill it with red bean paste and egg yolk filling, tighten the seam, loosen the seam and slightly shape it into a round shape and place it on the baking tray;

7. Brush the surface evenly with egg yolk liquid and sprinkle with black sesame seeds. Put it into the oven preheated to 180 degrees, on the middle layer, and bake for about 30 minutes.
