How to stew fish deliciously and easily

Method 1

Ingredients: one yellow croaker, cooking wine, onion, ginger, garlic, dark soy sauce, rock sugar, star anise, dried chili pepper, cinnamon, salt, boiling water

Remove the scales and internal organs of the yellow croaker, wash it and cut it into sections. Add onion, ginger and cooking wine and marinate for about 20 minutes. Use kitchen paper towel to absorb the moisture from the marinated yellow croaker. Put a proper amount of oil in the pan, add the yellow croaker and fry until both sides are golden brown, then add star anise, onion, ginger slices, and dried chilies and stir-fry until fragrant. Add appropriate amount of hot water to cover the fish, then add soy sauce, salt and rock sugar and simmer over medium-low heat. During this time, use a spoon to scoop some soup and pour it on the fish. Finally, cook the sauce over high heat until it thickens. Don't let it become too dry. It tastes great with rice or pancakes.

Method 2

Ingredients: Crucian carp

Production steps:

First, thaw the frozen fish bought from the supermarket in water (skip this step for fresh fish), then wash it clean. Chop the onion, ginger, garlic and coriander and place them on a plate for later use. Then fry the cleaned fish on both sides in a frying pan and add some soy sauce. Then put the fried fish into the stew pot, add onion, ginger, garlic and a small packet of prepared fish stew ingredients. Add water to the stew pot, making sure it covers the fish, cover it, and simmer for 15 to 20 minutes. When serving, add an appropriate amount of salt and sprinkle some coriander, and the fragrant stewed fish is ready.

The first step is to clean the fish

In addition to removing the scales during the cleaning process, there is a line with a strong fishy smell inside the fish that also needs to be removed. It is hidden under the gills and on both sides. After cutting the fish, grab the line with your hand and pull it out with a snap of the knife. Of course, some fish have a layer of black film, which also needs to be removed.

The second step is to cook the fish.

First, pour the oil into the pan and heat it up to allow the pan to be heated evenly. Then add a little salt to season. Finally, put the fish into the pan and fry it. When frying, remember to turn the high heat down to medium or low.

Step 3: Fry the fish until the edges are golden.

Add half a cup of cooking wine, stir-fry with onion, garlic and ginger. If you like spicy food, you can add some dried chilies.

Step 4: Add the fried fish into the soup pot

Add boiling water (but not the fish body), then add some tofu, turn the heat to high, cover the pot and simmer, let the ingredients simmer, and it is ready to eat when the aroma comes out.
