Authentic iron pot fish stew recipe

When it comes to the various delicacies stewed in iron pots, the ones that everyone is more familiar with are fish stewed in iron pots and goose stewed in iron pots. Stewing food in an iron pot is a northern practice. In the cold winter, several people sit together and watch the food stewed in the iron pot in the middle. They can also stick a few northern-style flatbreads on the edge of the iron pot. After cooking, the fish and the flatbreads are cooked at the same time. Sugar, soy sauce, cooking wine, vinegar, dried chili pepper

Preparation method:

Buy the fish, take out the internal organs, clean it, and use a knife to cut a few times on the fish so that it will be easier to absorb the flavor when stewing it. Dice the fat, slice the onion, ginger and garlic, and cut the tofu into pieces for later use. Put oil in the pot, pour in the fat and stir-fry. When the fat releases oil, add the bean paste, star anise, onion, ginger and garlic in turn and stir-fry until fragrant. Then add soy sauce and water to make soup. When the soup boils, add the prepared dried chili peppers, sugar and fish into the pot and stew. After stewing on medium heat for 15 minutes, add the chopped tofu and stew for ten minutes before adding salt.

Ingredients:

Ingredients:

Tofu, cabbage stalks, vermicelli, appropriate amount

Seasoning:

Spicy seasoning, peppercorns, tomato sauce, cooking wine, garlic chili sauce, ginger slices, chopped garlic cloves, scallion segments, chili oil, and oyster sauce in appropriate amounts.

Marinade for fish:

Salt, cooking wine, white pepper powder to taste

Production steps:

After killing the grass carp, cut it a few more times and drain the water. Add appropriate amounts of salt, cooking wine and white pepper powder and mix well with water. Marinate the fish in the marinade for 40 minutes to an hour. Soak the vermicelli in advance. Cut the tofu into pieces and boil them in light salt water. Stir-fry slices, chopped garlic cloves, scallion segments, tomato sauce, garlic chili sauce, oyster sauce and cooking wine until fragrant. Add the marinated fish and tofu cubes, add appropriate amount of hot water and bring to a boil over high heat. Add the cabbage stalks, cover the pot and simmer over medium heat for 20-25 minutes. Put the vermicelli into the pot and cook for a while, then add chili oil and appropriate amount of salt.
