1.1 Put all the three ingredients above into a bowl, add eggs and mix well, add salt, cooking wine and sugar and mix well. Because the amount of lotus root is relatively large, it can be made into a ball without starch filling.

2.2 Wash the lotus root and cut it into small pieces, making sure it is a bit granular. Chop the pork into minced meat. Chop the ginger into small pieces.

3. Roll the prepared filling into large balls and put them into a bowl. The lion head is much bigger than the meatball.

4. Add shredded ginger, cooking wine and pepper powder to a pot, add water to cover the lion head, and steam for 25 minutes.

5. Add a little chopped green leaves to the steamed lion head before serving, then serve in a bowl. If there is coriander, it is best to use chopped coriander. I forgot to buy it today, so I used chopped green vegetables instead.
