4. Add tartar powder to egg whites and beat with an electric whisk until coarse foam is formed.

5. Beat with an electric whisk at medium speed until it becomes fish-eye bubbles, then add 10g of white sugar.

6. Then add the remaining granulated sugar in two batches and continue beating with an electric whisk until dry foam is formed (small firm peaks can be seen when the whisk is lifted).

7. After the meringue is whipped (preheat the oven to 140 degrees), mix the meringue with the egg yolk paste three times, stirring it up and down evenly to form the cake batter.

8. Pour the mixed cake batter into the mold.

9. Use a scraper to smooth the surface, pick up the mold and knock it hard on the table a few times to shake out the large bubbles.

10. Put it into the preheated oven at 140 degrees, lower layer, and bake for 45 minutes.

11. Try not to open the oven door during the baking process. Take the bread out immediately after baking and place it upside down on a wire rack to cool to prevent shrinkage. Once cooled completely, turn the cake out.
