How to make red oil chicken shredded tofu

1. Wash the chicken breast, put it into the pot with ginger slices, scallions and cooking wine, cook until done, then cool it in ice water to keep the chicken elastic.

2. Break the chicken into thin strips with your hands after rinsing in ice water

3. Chop ginger, onion and garlic into small pieces

4. Remove the seeds from the dried chili peppers and cut them into thin strips. Because it is autumn and the weather is dry, you can use less chili peppers, just a little bit of spiciness is enough

5. Take the tofu out of the box. To keep the tofu intact, here is a tip: cut the four corners at the bottom of the tofu.

6. Then the tofu will be easily taken out without being damaged.

7. Cut the tofu into slices about 0.05 cm in size

8. Put it in a plate and steam it for about ten minutes.

9. Put the shredded chicken on the steamed tofu

10. Sprinkle with minced ginger and garlic

11. Pour soy sauce and vinegar on top. I use June fresh soy sauce, which tastes better.

12. Heat oil in a pan, and when it is 50% hot, put the chopped chili into the pan and fry until the oil turns red.

13. Pour over shredded chicken

14. Finally, sprinkle with chopped green onions and serve.
