Hunan cuisine boiled fish recipe

Hunan boiled fish is a common way to cook boiled fish. You can choose black fish and an appropriate amount of sauerkraut to make it. It tastes very delicious and has good nutritional value. Ingredients: one black fish (500 grams), 200 grams of sauerkraut, a packet of spicy fish seasoning sold in the supermarket (if you can't use it all), a little onion, coriander, garlic, dried chili peppers, and Sichuan peppercorns (depending on your personal tolerance for spicy food). Method: 1. Kill the black fish, remove the bones, and slice the meat (you can ask the fish stall owner to do this for you), cut the fish head in half and wash it. Add salt, cooking wine, starch and egg white to the fish and marinate slightly. 2. Heat the pan with oil, add the sauerkraut and stir-fry until dry, then serve. 3. Fry the fish head until golden brown, then add water and boil over high heat until the soup turns milky white. Add salt, pepper, chicken essence and a little sugar to season. Add sauerkraut and cook for one minute. Serve in a large bowl. 4. Wash the pot, fill it with clean water, bring to a boil, blanch the fish fillets until cooked, and remove from the pot once the fish turns white and cook for another 30 seconds, otherwise it will become tough. Add to the soup bowl. 5. Place the green onion and coriander on top of the fish. 6. Heat oil in a pan, turn to low heat, add garlic and stir-fry until fragrant, then add dried chilies, Sichuan peppercorns, and a little spicy fish seasoning, stir-fry until red oil appears, turn off the heat, pour the oil on the onions and coriander, and you're done!

Tips: The function of egg white is to lock the moisture of fish, making it more tender! But half an egg white is enough, don't use too much, otherwise the fish fillet will become fish fillet egg drop soup when it is put into the pot.

Ingredients: about 2.5 pounds of silver carp, 1 cucumber, 1 lettuce, 250 grams of bean sprouts, 1 pickled vegetable, ginger and garlic granules, 10 grams of green pepper, 30 grams of dried chili, pepper, cooking wine, Pixian bean paste, half a packet of Jingong boiled fish seasoning, soy powder, dark soy sauce, salt, MSG, scallion, coriander. Method: 1. Clean the silver carp at the fishmonger, take it home, wash it a few times, drain the water, and marinate it with cooking wine, salt, and a little tenderizer.

2. Peel the lettuce and cut it into long slices, cut the cucumber into long slices, wash the bean sprouts, cut the kimchi into pieces, and cut the pepper into sections. 3. Heat the oil in a pan and fry the vegetables, add some salt and fry until cooked. Transfer to a bowl and set aside. 4. Put the seasoning packet, bean paste, kimchi, ginger, garlic, pepper and a little dark soy sauce into the pan for the second time and stir-fry until fragrant. Then put the fish head and fish fillets in and stir fry a few times. Add water and boil for 2 minutes. Then put the fish fillets in and cook until done. Add MSG and scallions and pour into a dish. 4. Put the chili peppers and green peppercorns on the fish, put oil in a hot pan, pour it on the fish when it is 80% hot, and then add coriander.
