Homemade cold pork trotters

Pig's feet, also known as pig's trotters, are a food ingredient with relatively high nutritional value. There are many ways to cook pig's trotters, among which cold-mixed pig's trotters is more common and the method is very simple. Of course, the trotters must be cooked first, and then let cool before they can be mixed cold. You can also add some other seasonings when mixing it cold. Homemade cold pork trotters

Ingredients: 300 grams of pig's trotter, 1 green garlic, 1 chili, appropriate amount of coriander, appropriate amount of shredded ginger, 1 teaspoon of light soy sauce, 1 teaspoon of umami sauce, 1 teaspoon of fine sugar, 1/2 teaspoon of black vinegar, 1 teaspoon of glutinous rice vinegar, 1 teaspoon of mirin, 1 teaspoon of sesame oil. Method: 1. Wash and cut the green garlic and chili into shreds; cut the coriander into small sections and set aside. 2. Take a mixing bowl and add all the ingredients from step 1, shredded ginger and all the seasonings and mix well. 3. Add the pork trotter slices into the mixture in step 2 and mix well.

Method 2 Ingredients: Main ingredients: 1 pig's trotter, auxiliary ingredients: blending oil, diced red pepper, chopped green onion, sesame sauce, MSG, sesame oil, 1 sachet, salt, and dark soy sauce.

Cooking method ① After cleaning the raw pig's trotter, use a knife to cut a cut at the front toe. Then make a deep cut in the "belly" of the pig's trotter. Make another cut along the pig's trotter's lengthwise to make it easier to season. ② Pour enough water into the pot, add crushed ginger, add appropriate amount of salt, bring to a boil over high heat, then simmer for 40 minutes over low heat. After the cooked pig's trotters have cooled, soak them repeatedly in clean water to remove the grease. , use a knife to cut the soaked pig's trotters into large pieces. ③Wash the red pepper and cut it into circles. Chop the garlic. , put the chopped pig's trotters, minced garlic and red pepper rings into a clean small bowl and sprinkle with coriander. ⑤ Take a clean small bowl, pour in 1 tablespoon of sugar, 1 tablespoon of light soy sauce, sprinkle with appropriate amount of salt, pour in 1/2 tablespoon of aged vinegar, sprinkle with a little pepper powder, and pour in appropriate amount of cooking wine according to your preference. ⑤ Pour the prepared sauce into a small bowl containing pig’s trotters, add one tablespoon of red oil and mix well.

Tips 1. Be careful when chopping raw pig's trotters. 2. After the pig's trotters are cooked, let them cool, soak and rinse them in clean water to remove the grease. 3. Pig's trotters contain a high amount of cholesterol, so the elderly with weakened gastrointestinal digestive function should not eat too much at one time; and people with liver and gallbladder diseases, arteriosclerosis and hypertension should eat less or not eat them.
