How to make dry steamed siomai

1.1 Make the skin first: refer to the ratio of siomai skin powder mentioned above, add a pinch of edible alkali, blanch the dough with a small amount of water, add an egg yolk after it cools slightly and knead evenly. Don't ask about the water amount formula without measuring -

2.2 Ingredients: egg yolk (for making skin), shrimp, pork tenderloin, ginger and carrot (for garnish). What is not in the picture is flour, starch, edible alkali and some seasonings.

3.1 Use cornstarch as hand powder and place it on the chopping board to shape it into a rectangular shape.

4.2 After kneading, add a small piece of lard and knead evenly. Set aside to rest for 15 minutes. The dough should be slightly harder than the dumpling wrappers.

5.1 The round skin is formed and the small yellow skin is ready.

6.2 If there is enough flour, wrap the dough on a rolling pin and slowly roll it out until it is thin enough.

7.1 Place in a bowl and season: 1 spoon of light soy sauce, 1/4 spoon of white pepper, 1/2 spoon of cooking wine, 1/2 spoon of starch, and salt as needed.

8.2 Prepare the filling: peel the shrimp, cut the edges, remove the intestines and chop. Chop pork, mushrooms and ginger into fine pieces.

9. Scoop up the filling from the bottom of the bowl and start beating.

10. Fall hard, and your muscles will be basically formed after 15 minutes.

11. Add sesame oil for seasoning and continue beating for five minutes to allow the meat filling to fully become sticky and firm. The beating step completely affects the taste of the siomai, so please do not cut corners.

13. Start wrapping: Place the dough on the palm of your hand, use a spatula to scrape an appropriate amount of stuffing into the center, smooth it slightly first, and squeeze out the bubbles between the meat stuffing.

14. Then use your index finger, middle finger and thumb to form a circle, use your ring finger to hold the bottom and squeeze out the siomai, and continue to smooth the mouth with a bamboo knife.

15. Garnish with chopped carrots. I am poor. Decorate with crabs to show your wealth and majesty. Cook over high heat for 5-8 minutes before serving.
