1. Remove the scales and internal organs of the sea bass, cut the head and tail, and then slice off the middle part

2. After the fish fillets are sliced, remove the fish bones from the belly. Because the fish meat in the belly is thinner, I will cut off the thinnest part to prevent uneven maturity later.

3. After cutting, wipe off the moisture with kitchen paper, add sea salt and colored pepper and marinate for 5 minutes

5. Heat a frying pan, add a little olive oil, fry the fish skin side down, and add fresh spices

6. Cook on low heat for 3 minutes. When you see the fish changing color, turn it over for 1 minute, turn off the heat and cook for another minute. Use the residual heat from the pan to cook the fish.

7. Take out the fish, add barbecue sauce and a little water to the original pot, boil it for a while, and pour it on the fish.
