17. The freshly fried tofu is slightly puffy and the surface is very crispy. Remove from heat and set aside.

18. Leave a little oil in the wok and fry the ingredients in Figure 5 below until fragrant.

19. Add rice wine and white wine, stir well and then add dark soy sauce.

20. Add a small bowl of water, salt and chicken essence, and stir well.

21. Add the fried tofu and fish pieces and stir-fry evenly.

22. Turn to low heat and let the soup slowly absorb into the fish and tofu cubes.

23. It does not need to be cooked for too long, just until the soup is thick. Sprinkle some spicy flavor before serving.
