7. When the egg liquid is about to solidify (there is still flowing egg liquid on the surface), turn down the heat and dry it slowly. Because no sweet potato flour is added, it will break if you turn it over with a spatula, so turning down the heat in time will make the egg pancake softer and more tender.

8. Finally, pour sweet and spicy sauce or tomato sauce according to your preference and serve.
