First, the raw materials of salted preserved eggs

We choose Guang'an's famous local fine variety: Guang'an duck eggs. If you can't find this kind of duck eggs, you can use ordinary duck eggs available in your area. Guang'an Mallard has strong foraging ability and is suitable for grazing. It can be raised in any place with grazing conditions such as lakes, rivers, ponds, etc.

Second, put it into the cellar after drying

In order to pickle salted eggs well, the second step is an indispensable procedure: first select duck eggs with uniform size, smooth skin and no cracks, wash them twice by hand and machine, dry them and put them into the cellar.

Third, prepare the soup

The soup is made from more than a dozen Chinese herbs including aniseed, bay leaves, fennel, nutmeg, star anise, white button, angelica sinensis, tea leaves, and fresh ginger. There is still a big difference between the packaged salted preserved eggs on the market now and the traditional salted preserved eggs circulated in Guang'an. However, the traditional ones are not easy to preserve and generally have a shelf life of only a few days. After soaking in soup for twenty to thirty days, take it out. At this point the salted preserved eggs are ready. Salted preserved eggs have a good taste and are a special food that many people like. They are delicious when used alone or cooked with other foods.
