How to steam meat patties to make them fragrant and tender

Steamed meat patties are more popular in the south. Although the steamed meat patties in the south do not use as much oil as the fried meat patties in the north, and are not as flavorful as fried pancakes, people with strong tastes may not like them. However, steamed meat patties are lighter and healthier than fried meat patties, and taste unique. So how can you steam meat patties to make them fragrant and tender? You can add some cornstarch and tofu to the meat filling to make it taste more fragrant, smooth and tender.

1. Choose a good piece of meat

1. It is recommended to choose tenderloin, which is the most tender meat on the animal.

2. When chopping the meat, you should add some pork fat. During the steaming process, the lard will make the meat more tender and delicious.

Seasoning skills need to be mastered

1. Add a little cornstarch to the meat patties. The most commonly used cornstarch is starch, which will make the meat patties more tender and fragrant. But you have to know when to stop, otherwise it will become hard.

2. You can add a little egg white/salt/vinegar to the meat patties to make them more tender and fragrant.

3. You can put some tender tofu in the meat, crush it and mix it with the minced meat and steam it. It will have a tender taste.

4. When adjusting the flavor of the meat patties, add water to the meat, stirring in the same direction as adding, until it becomes firm and sticky. This is the same principle as adding water to dumpling fillings. It will make the meat more tender and elastic, otherwise it will be a bit dry.

5. Do not beat the minced meat during the seasoning process, otherwise the steamed meat patties will become hard.

2. Pay attention to the method of steaming meat pie

1. Grease the container for steaming meat patties with oil to prevent it from sticking and make the meat patties more tender.

2. Be gentle when packing the minced meat. Do not press hard with your hands. The thickness should be 1 cm, otherwise it will affect the tenderness of the meat patties.

3. If you have time, you can cover it with a layer of plastic wrap, which will make it more tender, but you need to steam it for a little longer. Do not lift the plastic wrap when it is not cooked yet (it is better to steam it for a little longer).

4. There will be some soup in the steamed dish when it is out of the pot. Do not pour it out. Wait for two minutes and the soup will be absorbed back into the meat patties, ensuring that they are fresh, tender and juicy.
