Steps/Methods

1. Clean the squid and remove the skin to remove the fishy smell.

2 Make diagonal cuts on the squid to create a net-like shape. Tear off the small wings of the squid and cut them diagonally.

3. Cut the squid slices into three evenly spaced strips, remove the eyes of the baby squid and discard them, and cut the squid strips into pieces of appropriate size.

4Put water in a pot, add ginger slices, garlic slices and a little salt and bring to a boil.

5 Add the squid and bring to a boil again.

6After boiling, remove the squid and place on a plate.

7 Prepare the dipping sauce: Take a small spoonful of garlic oil, then add twice the amount of soy sauce as the garlic oil and stir.

Tips

1. When making a slashing cut on the squid, it is best to make the cut on the side inside the squid's belly. Making a cut on the squid's skin is easy to tear and difficult to control.
