1. Prepare the cake ingredients: 2 eggs (100g), 30g granulated sugar (for egg whites), 60g low-gluten flour, 30g granulated sugar (for egg yolks);

2. Beat the egg yolks, add 15 grams of fine sugar and stir until it is completely blended into the egg yolks;

3. Add the remaining 15 grams of fine sugar and rub the basin with a whisk;

4. Beat the egg yolks until they turn white;

5. Add fine sugar to the egg whites in 3 batches and beat until a small curved hook is formed, and the wet foam is close to the dry foam;

6. Add egg white to egg yolk three times and stir evenly;

7. Sift in low flour and mix evenly, put into piping bag, and squeeze out the cake body of corresponding size of mousse mold on the baking tray;

8. Bake in the oven at 190°C for about 10 minutes, then take out and let cool;

9. Prepare the ingredients: 110g cream cheese, 30g fine sugar, 85g plain yogurt, 4ml lemon juice, 50ml light cream, 5g gelatin sheets;

10. Cut the gelatin into small pieces and put them into ice water to soften;

11. After the cream cheese is softened, add fine sugar and beat with a whisk until smooth;

12. Add yogurt twice and beat with a whisk;

13. Squeeze in an appropriate amount of lemon juice and mix well to form a cheese paste;

14. Soak the gelatin sheets for about 10 minutes, drain the water, and heat them in 80℃ hot water to melt;

15. Add appropriate amount of cheese paste to the gelatin liquid and mix well;

16. Pour the mixed liquid back into the cheese paste and stir evenly;

17. Beat the whipped cream until it is 70% full and can almost keep its shape;

18. Add the whipped cream into the cheese paste and mix well;

19. Let the baked cake cool naturally, tear off the baking paper, and cut into a shape and size slightly smaller than the mousse mold;

20. First put a piece of cake into the mousse mold;

21. Pour the cheese paste in and spread the durian pulp in the middle;

22. Place two more cake slices on top and press them down slightly;

23. Pour the remaining mousse into the mixture and smooth the surface. You can shake it slightly to remove some small bubbles. Put it in the refrigerator to solidify for 2 to 4 hours.

24. Take out the solidified cake, blow it on the edge of the mousse mold with a hair dryer, and it can be easily demoulded. Then you can make appropriate decorations according to your own situation.
