1. Wash and chop the pickled snow vegetables (you can also buy pickled ones from the market), and soak them in clean water for half an hour (the time depends on the saltiness of the snow vegetables, if it is too salty, soak it for a longer time)

6.1 Put the snow vegetables you bought in autumn in the sun until they wilt (mine seemed to be exposed to too much sunlight, haha)

7.2 Add sugar, stir fry evenly and serve. Because snow vegetables are salty and light soy sauce is added, there is basically no need to add salt. If it feels not salty enough, you can add a little bit.

8. Do not wash it. Pick up a snow vegetable and roll it into a circle and put it in the container.

11. Cover the lid and place it in a cool place away from light for about 20 days. Turn it over several times during the period and keep away from oil and raw water on your hands. Mine might have been dried too dry to remove enough moisture. After pickling for a week, I found that no water had been released and the salt was still grainy and not dissolved. So I added a bowl of pure water. If the snow vegetable releases water on its own, you don’t need to add more water.

12.The jar was pickled at the end of November and has been placed next to the air conditioner outdoor unit. I just took it out and ate it these few days. Look, the emerald green color is so pleasing to the eye.
