11.2 After about an hour, the dough will have fermented to 2-2.5 times its original size. Dip one end of a chopstick in flour and poke a hole in the top of the dough. If the hole does not collapse or shrink but remains the same, fermentation is complete.

13. Weigh the cinnamon powder and sugar, mix well and set aside

14. Put an appropriate amount of butter in a bowl and heat it over water to melt it.

15. Sprinkle dry flour on the chopping board, roll the relaxed dough into a rectangular sheet with a rolling pin

16. Turn over and brush with melted butter

17. Sprinkle cinnamon sugar evenly

18. Roll up the dough from top to bottom with the interface facing down

19. Use a knife to cut into eight equal parts

20. Line the baking tray with baking paper, place the bread embryo on the tray with the cut side facing up, and flatten it gently.

21. Place in a warm and humid place for the second fermentation

22. After the second fermentation, brush the surface with egg liquid.

23. Preheat the oven to 180 degrees, middle layer, upper and lower fire, 15 minutes
