Ingredients: 200g pork belly, 50g shepherd's purse, 30g cucumber, a little onion, ginger and garlic, 25g tomato sauce, 5g cooking wine

Method: 1. Cut the plum meat into thin slices 5 cm long and 2.5 cm wide, cut the shepherd's purse into round slices, and cut the cucumber into willow leaves.

Put the meat slices into a bowl, add egg white, a little salt and water starch, and mix well.

Put white oil in the spoon and heat it until it is 40% to 50% cooked, then put in the starched meat slices, quickly stir with iron chopsticks, and then drain the oil in the spoon. 2. Mushroom, bamboo shoot, plum strips and pork soup

Ingredients: pork belly, mushrooms, bamboo shoots, fungus

1. Take 1/3 of a piece of plum meat and cut it into slices (not too thin). Marinate it with white wine, starch, soy sauce, sugar, pepper, salt, onion and ginger for at least half an hour.

2. Wash and slice bamboo shoots and mushrooms, blanch them in boiling water, drain and dry. When the oil is hot, add onion, ginger, bamboo shoots, mushrooms, etc. and stir-fry for a while, then add hot water to boil.
