How to make homemade hot and sour noodles

The deterioration of living environment and the increase of study and work pressure are slowly eroding our health, so health preservation actions are urgent.

1. Prepare the seasonings, mainly soy sauce, vinegar, sugar, Swinhoe's soup (one pack each of chicken soup and bone soup), salt and chicken essence, chili powder, pepper, Sichuan pepper powder, and five-spice powder.

3.2 Soak the sweet potato flour until soft and set aside

4.12 Chop the onion, ginger and garlic and set aside

5.21 One tablespoon of chili powder, half a tablespoon of pepper powder, one teaspoon of five-spice powder, roughly in the ratio of 4:2:1, to make the powder

6.1 After frying, add onion, ginger and garlic and fry until fragrant

7.2 Pour oil into the pan and stir-fry the powder on low heat

8. Add the boiling water and then add Swinburne soup stock. (If you don’t have any, other thick soup bases will work, but pre-made soup stock is best)

9. Add 20g soy sauce and about 50g vinegar. You can taste the acidity to control it yourself. (I used the cooked vinegar made with cinnamon, star anise and peppercorns. This way the vinegar is not very astringent and is very fragrant.)

10. Add some sugar to adjust the taste, sprinkle with appropriate amount of pepper before serving

11. This is the finished hot and sour soup. In addition to making hot and sour noodles, rice noodles are also good choices.

12. Blanch the vegetables in boiling water

13. After the water boils, blanch the sweet potato flour for about 50 seconds. Not too long otherwise it will not be chewy.

14. Spread sweet potato flour on top, pour hot and sour soup on top, sprinkle with cooked sesame seeds, fried peanuts, green vegetables and chopped coriander.
