How to make caramel custard pudding

1. First, make the caramel sauce: warm the milk pan over low heat, pour in sugar and 2 teaspoons of hot water

2.12 When the granulated sugar starts to melt, turn the milk pan to ensure even heating throughout.

3.21 Cook until all the granulated sugar is dissolved and the whole mixture turns brown, then turn off the heat. (Gently shake the milk pan back and forth and left and right while boiling to ensure even heating, but never stir with a spoon, otherwise the syrup will easily turn into crystals.)

4.1 Pour the hot caramel sauce into the pudding mold and wait for it to cool and solidify

5.2 Add 2 tablespoons of hot water and gently shake the milk pan to blend the syrup and hot water to form caramel sauce. (Try to use a deeper pot, otherwise the syrup will splash everywhere and cause burns easily)

6. Make pudding liquid: Heat the milk to about 60 degrees

7. Put the eggs and granulated sugar into a stainless steel bowl and stir with a whisk until the sugar dissolves.

8. Slowly pour the milk in step 2 and stir gently with a whisk.

9. Filter 4 with a sieve to remove large bubbles and impurities in the eggs to make pudding liquid.

10. Steamed pudding: After the caramel sauce in the pudding mold solidifies, pour the pudding liquid evenly into the pudding mold. Place the pudding mold in a deep baking tray filled with 1cm high hot water.

11. Preheat the oven to 150 degrees and steam and bake for 35 minutes. After removing from the oven, cool at room temperature and refrigerate. (You can also use 170 steaming and baking, the time will be shorter)

12. Use the back of a spoon to press lightly along the edge of the patch mold to allow air to enter between the pudding and the mold. Place the small plate upside down on the mold, and turn it over so that the plate is at the bottom and the pudding mold is at the top. Shake it up and down a few times to easily release it from the mold.
