Main ingredients: 2 three-yellow chickens, 0.5-1 teaspoon pepper salt, a little dried basil leaves, 1 tablespoon rice wine, 1 teaspoon sesame oil, 1-2 teaspoons salt (rose salt) (please use according to the size of the chicken legs), 2 slices of ginger. Method/steps: 1. Pour the white wine on the chicken and spread it evenly inside and out. 2Put turmeric powder, salt, pepper and MSG into a plate and mix well to make salt-baked chicken powder. 3 Apply salt-baked chicken powder on the chicken and also apply a layer inside the chicken belly. Put sliced ​​ginger into the chicken belly and marinate for 1 hour.

Method/Step 2: Tie the chicken up with a rope and hang it up to air dry for 3-4 hours. Place a piece of tin foil and brush a layer of oil on the surface, put in the three-yellow chicken, and wrap it with the tin foil facing upwards. 3 Put the chicken into the casserole, then add coarse salt, making sure the salt completely covers the surface of the chicken. 4 Cover the casserole and place it on the stove. Ingredients: Marinade: A handful of coarse salt, a tablespoon of peppercorns, a tablespoon of minced garlic, and a teaspoon of minced ginger, put them all in a dry pan and stir-fry until the aroma comes out. Ingredients: One chicken, about two pounds, one teaspoon of galangal powder, and cooking wine. Dipping sauce: chopped green onion/minced ginger/minced garlic/salt, pour boiling oil and mix well. Utensils: A pot that can be sealed. A large sheet of tin foil. Preparation: (1) Coat the chicken inside and out with scallions/ginger slices/minced garlic/cooking wine, then apply pepper and salt and marinate for about an hour and a half. (2) Rinse the chicken with clean water, wipe dry, evenly apply ginger powder on it, and wrap it tightly with multiple layers of tin foil. (3) Spread a thick layer of coarse salt on the bottom of an iron pot, heat it on the stove over high heat, put the chicken in, and add enough coarse salt to completely cover it. (4) Seal the iron pot with a lid, bake over high heat for 25 minutes, then switch to low heat and continue baking for 10 minutes. Turn off the heat and simmer for 10 minutes. (5) Open the tin foil package and apply a little (salt, soy sauce, sugar, cooking wine, sesame oil. Eat with sesame oil) on the surface. Wait until it cools down a little before cutting into pieces. Serve with dipping sauce.
