How to make steamed spareribs with black bean sauce and oyster sauce

1. Chop the ribs into small pieces and soak them in clean water to remove the blood. If necessary, change the water twice in the middle until the water is clear, and then drain as much water as possible.

2. Ginger, garlic, fermented black beans, chili pepper (chili pepper can be omitted), chop the fermented black beans for later use (do not chop the fermented black beans too finely, just chop them slightly and leave some intact for a better look)

3. Add ginger, fermented black beans, chili pepper, oyster sauce, sugar, cornstarch into the ribs and mix well.

4. Chop the garlic, heat a little oil in a pan, and sauté the minced garlic and peppercorns until the garlic turns golden brown.

5. Pour the sautéed garlic, peppercorns and oil into the ribs, mix well again, and marinate overnight (if you are in a hurry, marinate for a few hours. I usually marinate it a day in advance, so it’s easier the next day)

6. Steam the marinated spareribs for about 20 minutes (this time is for a smaller amount of spareribs. If there are more spareribs, the time will be longer. You can use chopsticks to pick up the ribs at the bottom to check them during the process). I used an electric pressure cooker to steam the spareribs for this photo shoot (you can use an electric pressure cooker to steam the spareribs without making them chewy. Just select the "standard" pressure and use the "meat spareribs" setting), which saves you a lot of trouble.

7. Sprinkle the steamed ribs with chopped green onions. I changed the container of the ribs after steaming them to make them look better.
