Roasted Chicken with Chestnuts

Ingredients:

800g chicken, 150g chestnuts, onion, ginger, cooking wine, salt

practice:

1. Wash the chicken, cut it into small pieces, wash off the blood and drain the water again.

2. Put the chicken into a slightly deep plate, add a little green onion, ginger and a little cooking wine.

3. Steam until cooked. (Steam until cooked, no need to steam until mushy. After steaming, separate the chicken and chicken soup for later use)

4. Use a knife to make a small cut in the chestnut shell and cook in boiling water for 5 minutes.

5. Take the slightly cool chestnuts and peel them one by one, then put them into clean water.

6. Heat oil in a pan, stir-fry scallions and ginger, pour in the steamed chicken and stir-fry until fragrant, then add a little salt and a little light soy sauce.

7. After stir-frying evenly, add the peeled chestnuts and pour in the chicken soup used to steam the chicken.

8. Cover the pot with a lid and simmer over medium-low heat.

9. Cook until the chicken soup is thick and there is a little soup left, sprinkle in the scallion segments and turn off the heat.

1. Take a look

Chestnuts with shiny surface and dark color are aged chestnuts and should not be purchased; chestnuts with lighter color should not be purchased; chestnuts with lighter color and less glossiness are fresh chestnuts, which have more fluff at the tail and can be purchased with confidence.

2. Second pinch

If you pinch the belly of a chestnut and it feels slightly elastic, it means the grains are solid and the flesh is generally plump. If it feels hard, it is an aged chestnut. If it feels hollow, it means the flesh is shriveled.

3. Three shakes

Shake the chestnuts. If you can hear a clear sound, it means the flesh has become dry and hard, and the chestnuts are old or spoiled. If there is a muffled sound or no sound, they are new chestnuts.
