Buddha Jumps Over the Wall is a relatively traditional dish and a famous dish in Fuzhou. Buddha Jumps Over the Wall also has many meaningful names, such as Fu Shou Quan, which represents longevity and good fortune. Buddha Jumps Over the Wall is rich in nutrients and can promote development, enhance immunity, and anti-aging. It is especially suitable for some beauty-conscious female friends. So how do you make the dish Buddha Jumps Over the Wall?

Statement 1

Buddha Jumps Over the Wall was originally named "Fushouquan". In the 25th year of the reign of Emperor Guangxu (1899), an official from the Fuzhou Official Money Bureau hosted a banquet for Zhou Lian, the governor of Fujian. In order to curry favor with Zhou Lian, he ordered his wife to cook the dish herself. They used Shaoxing wine jars to put more than 20 kinds of raw and auxiliary ingredients such as chicken, duck, mutton, pork tripe, pigeon eggs and seafood, and simmered it, and named it Fushouquan. After tasting it, Zhou Lian praised it highly. When asked about the name of the dish, the official said that the dish means "good luck, happiness and longevity", so it was named "Fu Shou Quan". Later, Zheng Chunfa, a chef at the yamen, learned how to cook this dish and improved on it, making it taste better than the previous one. When Zheng Chunfa opened the "Juchunyuan" restaurant, this dish became a sensation in Rongcheng. Once, a group of scholars came to taste this dish. When the dish was opened, the aroma of meat filled the air. One of the scholars was so fascinated by it that he was inspired to write a poem. He immediately chanted: "When the dish is opened, the aroma of meat spreads to all around. Buddha hears it and abandons Chan to jump over the wall to come." At the same time, in Fuzhou dialect, "Fu Shou Quan" and "Fo Tiao Qiang" have similar pronunciations. From then on, quoting the poem: "Buddha Jumps Over the Wall" became the official name of this dish, and it has a history of more than 100 years.

Explanation 2 : According to Fujian custom, on the third day after her marriage, a new bride must cook by herself and serve her parents-in-law to win their appreciation. The legend goes that there was a rich girl who was spoiled and had no experience in cooking. She was very worried on the eve of her wedding. Her mother took out all the delicacies from the land and sea at home and made various dishes, wrapped them one by one in lotus leaves, and told her how to cook. Unexpectedly, the young lady had completely forgotten the cooking method. In a panic, she poured all the dishes into a jar of Shaoxing wine, covered it with lotus leaves, and placed it on the stove. The next day, the rich aroma wafted through the air and the whole family praised the dish. This is the origin of “Buddha Jumps Over the Wall”, which is made up of 18 dishes cooked in one pot.

The third story goes that a group of beggars carried clay bowls and pots to beg for food everywhere every day. They poured all kinds of leftovers they got together and cooked them, creating a steaming and fragrant aroma. The monk couldn't resist the aroma and jumped over the wall to eat the food. There is a poem to prove it: "When the wine is brewed, the aroma of meat spreads to all the neighbors; when the Buddha hears it, he abandons his meditation and jumps over the wall to come."

Other versions say that Xuanquan, an eminent monk of the Tang Dynasty, was on his way to the Shaolin Temple in Fujian Province to preach Buddhist scriptures when he passed by the "Capital of Fujian" Fuzhou. He stayed overnight in a hotel. It happened that a nobleman's house across the wall was entertaining guests with "full altar of incense". The monk smelled the fragrance and immediately gave up his years of Buddhist practice and jumped over the wall to enjoy the "full altar of incense". This is why it is called "Buddha Jumps Over the Wall".
