How to make glutinous rice lotus root with osmanthus

1. Soak black rice and glutinous rice together for 6 hours

2.1 Peel the lotus root, wash and drain, cut off one end and use it as a lid

4.1 Pour the glutinous rice into the lotus root holes. Make sure they are filled thoroughly without any gaps. You can tap them on the chopping board while filling.

5.2 The glutinous rice and black rice need to be soaked until they are white and plump.

6. After filling everything in, use three toothpicks to seal the mouth, so that the glutinous rice will be sweeter.

7. Put the glutinous rice into the pot and cook it. This process is very complicated. At the beginning, I added brown sugar and water to cover the lotus root and put it into the electric pressure cooker for 30 minutes, but the lotus root still did not become soft and glutinous. Next, pour the boiled water back into the pot and cook for 30 minutes, until the juice starts to thicken. If you have a pressure cooker at home, you might as well try turning it on over high heat without changing the container and then turning it down to low heat, then continue to cook for 30 minutes to see how it works. I can't try it at home because I don't have a pressure cooker.

8. Cut the cooked lotus root into slices and drizzle with sweet osmanthus sugar before serving.
