How to make braised spareribs with Chu Hou sauce

1. Wash the ribs, drain and cut into 2cm pieces

2. Add one tablespoon of cooking wine, one tablespoon of dark soy sauce, two tablespoons of Chu Hou sauce, a little pepper powder, a little pepper powder, two dried chilies, 2-3 slices of ginger, and 1-2 scallions at a time, mix well and marinate for more than 1 hour

3. Wash the green peppers, cut them open and remove the seeds.

4. Cut into 2cm-long horse ear sections

5. Heat the wok and stir-fry the green pepper

6. Stir-fry until the green pepper is soft, scoop it out and put it in a bowl for later use

7. Heat about 30g of oil in a wok until it is 50% to 60% hot.

8. Turn the heat down to medium-low and fry the marinated spareribs in the pan.

9. Fry until the ribs are golden brown and the Chu Hou sauce on the surface is slightly crispy (there is flour in the Chu Hou sauce)

11. Wash the wok, add a little oil and heat it to 50-60% hot.

12. Add ginger slices, dried chili peppers and garlic and stir-fry

13. Pour in the fried ribs and turn them over twice

14. Add about 1 liter of fresh soup or water, one tablespoon of dark soy sauce, one tablespoon of cooking wine, one teaspoon of sugar, and a few drops of balsamic vinegar.

15. Bring to a boil over high heat first, then simmer over low heat for about 1 hour, until the ribs are cooked. You can use a pressure cooker, simmer for 15-20 minutes after the steam comes on, or you can use a stew pot, the time should be based on the ribs being cooked through.

16. After the ribs are cooked, pour in the fried green peppers. If you like strong flavors, you can add a little salt, but if you like light flavors, you don’t need to add salt.

17. Roast the green pepper and pork ribs for 2-3 minutes

18. Use a small spoonful of starch to make a thin starch, add a little MSG and serve, sprinkle with chopped green onions and fried sesame seeds (or drizzle with a little sesame oil).
