Lucky Rice Cake

Jili rice cake is a fried pastry with the characteristics of crispy surface, soft and glutinous inside and golden color.

Ingredients: 500 grams of yellow rice flour, 20 grams of white sugar, 30 grams of red dates, 30 grams of bread, 30 grams of eggs, 1000 grams of sesame oil (actual consumption 200 grams), and 200 grams of warm water.

Preparation method:

1. Add sugar to yellow rice flour, stir evenly, mix with warm water, steam in a steamer over high heat for about 252 minutes, take out, place on a chopping board with a little sesame oil, knead into yellow rice dough, make 20 dough pieces, flatten and roll into skins for later use.

2. Take the red dates, remove the core, and chop them into date paste for later use.

3. Wrap an appropriate amount of jujube paste in the yellow rice dough, then press it into small cakes for later use.

4. Beat the eggs into egg liquid, spread an appropriate amount on both sides of the wrapped small cakes, stick them with bread crumbs, and the raw dough of the auspicious rice cake is ready.

5. Put sesame oil in the pot, and when the oil temperature reaches 130 degrees, put the raw and rotten auspicious rice cake in. Fry until golden brown, then serve.

Key points:

1. The steaming time of yellow rice flour should not be too short, generally steam it for 25 to 30 minutes. Do not open the steamer lid before it is steamed, otherwise it will not be easy to steam it.

2. Steam the yellow rice dough, take it out and knead it with a little sesame oil.

3. Spread the egg liquid evenly, stick the bread crumbs together and pat them tightly with your hands to prevent them from falling off during frying.

Delicious homemade fruity rice cakes

1. Ingredients: rice cake ingredients (300g glutinous rice flour, 75g starch, 50g sugar, 50g butter, 450ml water); fillings: (hawthorn fruit strips, orange jam, melon fruit strips, black sesame candy).

2. Mix the rice cake ingredients into a paste, put it into a microwave bowl, select high heat and heat for 10 minutes.

3. Take it out every 2 minutes for 10 minutes and stir it several times in one direction with chopsticks until it becomes a translucent and very sticky batter.

4. Choose a deeper square box. I used a Lock&Lock sealed box and apply butter on all sides. This step is very important. Only after applying butter will the rice cake be easier to take out in the future. First, place a layer of melon fruit strips on the bottom of the box.

5. Pour in the rice cake batter mixed with hawthorn berry strips, and the height should be about 1/3 of the entire box.

6. Then pour in the rice cake batter mixed with orange jam. The height should be 1/3 of the Lock&Lock box.

7. Spread another layer of black sesame candy, leaving some space between each piece.

8. Finally, fill the box with the remaining rice cake batter, cover the box with the Lock&Metal lid and store it in the freezer. It is convenient and saves space.
