So how to make frozen fish fillets delicious? Thaw the frozen fish fillet, cut into 2 cm wide pieces and slice thinly. Put it in a small bowl, add appropriate amount of salt, egg white, cooking wine and starch, and stir gently. Add water to the pot and bring it to a boil. You can also use broth here. Blanch the marinated fish pieces until they change color, then take them out and place them on top of the bean sprouts. Place some dried chilies on top of the fish pieces. Put the remaining Sichuan peppercorns and Ma peppercorns in the previously cooked five-spice oil, and when the oil is 80% hot, add the remaining dried chilies. When the oil is boiling, use a slotted spoon to pour the hot oil over the fish. If you want to save time and don’t want to make five-spice oil, you can use Haidilao’s boiled fish seasoning, which tastes good too. Marinating: 1. Let the frozen Basa fish thaw naturally at room temperature (if you want to thaw it quickly, you can put it in water at room temperature, but never in hot water). 2. Pour out the thawed ice water in the plate and wipe the moisture on the surface of the fish with kitchen paper towels. 3. Drain the dried fish and cut it into even-sized pieces. Sprinkle 1/8 teaspoon of salt evenly on the surface of the fish pieces (just a little salt, the fish itself is a bit salty) 4. Sprinkle 1/8 teaspoon of black pepper evenly on the surface of the fish pieces. 5. Set the fish aside and marinate for 5 minutes. 6. Put a frying pan on high heat to heat the bottom of the pan, then turn to medium-low heat and pour in a small amount of olive oil. 7. Put the marinated fish pieces into the oil pan and fry over medium-low heat (pay attention to the fire and adjust the heat at any time). 8. Fry until one side is golden brown, then turn over and fry the other side. 9. Cook until both sides of the fish pieces turn golden brown, then take out the fish pieces. |
