How to make egg, milk and cornmeal pancakes

1. Take a container and put cornmeal, flour, sugar and baking powder into it and mix them evenly. Use a manual egg beater to mix the eggs evenly. Warm the milk over water.

2. Pour the yeast into the warm milk and stir to blend. The temperature of the milk should not be too high, about 40 degrees. If it is too hot, the yeast will be killed and the fermentation will not be possible! Let it sit for five minutes after blending!

3. Pour the evenly mixed egg liquid and blended milk yeast into the evenly mixed flour one after another, and stir evenly with a spatula until it becomes a batter as shown in the picture. Take another heat-resistant container, apply an appropriate amount of olive oil on the inner wall of the container, and then pour the mixed batter into it. Cover the container with plastic wrap! Place in a warm place indoors and let ferment until it doubles in size! After about an hour of fermentation, bubbles will appear on the surface of the fermented batter!

4. Soak the raisins in hot water for ten minutes, take them out and place them evenly on the fermented batter. Put them into the steamer, add cold water to the pot, steam on high heat for ten minutes, then switch to medium heat and steam for another twenty minutes! After turning off the heat, let it sit in the pot for five minutes.

5. Let cool, cut into small pieces, and enjoy the food!
