1. Select pork belly, beat it into minced meat, add chopped green onion and ginger, crack in an egg, add 2 spoons of cooking wine, 2 spoons of five-spice powder, 1 spoon of chicken essence, mix well clockwise, and marinate for ten minutes.

2. Wash and chop a Chinese cabbage, add a little salt, squeeze out some of the juice and set aside.

3. Peel a green radish, wash it, shred it into strips, and then chop it into small pieces for later use.

4. Put the iron pan on the stove, pour in half a bowl of peanut oil, add the peppercorns, stir-fry over low heat until fragrant, then remove the peppercorns and discard them, turn off the heat, cool the peanut oil, and set aside.

5. Add chopped green radish and cabbage into the marinated meat filling, pour in the cooled peanut oil, add about 2 spoons of salt, mix well in a clockwise direction to make the filling.

6. Use a colander to separate the cabbage residue from the juice, squeeze out the cabbage juice, put the cabbage residue into the stuffing, and keep the juice for later use.

7. In a bowl, put seven large spoons of dumpling flour, pour in the squeezed cabbage juice and appropriate amount of cold water.

8. Mix well and knead into dough, add sugar for more than half an hour.

9. Divide the sugared dough into several small doughs and knead them evenly. Then roll the small doughs into long strips, cut them into sections, flatten them, and roll them into dumpling skins for later use.

10. Wrap the fillings into the dumpling skin, make dumplings, put them in the pan and put them in the pot.

11. Pour boiling water into an iron pot, bring to a boil over high heat, add 1 teaspoon of salt (to prevent sticking), pour in the raw dumpling dough, bring to a boil over high heat, add two drops of cold water, and then serve.
