How to make fried dumplings with melon rind and pork in sauce

Every time you visit friends or colleagues’ homes, you’ll find that they all have one or two specialties. But every time it was my turn, I was always short of money. 1. Take about 500g of flour, sift it and place it in a bowl

7. Add a little sweet noodle sauce, soy sauce and five-spice powder, stir-fry over low heat until the diced meat is well-seasoned.

8. Pour out the juice from the melon rind, add a little salad oil and stir evenly.

9. Pour the cooled diced meat and chopped green onion and ginger into the melon rind.

10. Finally, add a little salt and mix the filling evenly.

11. After the dough sugar has risen, knead it again until the surface of the dough is smooth and delicate.

12. Sprinkle a little loose flour on the panel and knead the dough into even long strips.

13. Use a knife to cut out even-sized dough pieces. (I learned how to cut from my parents. Hold the knife in your right hand, and place your left hand palm down and parallel to the panel. Press down the long strips, cut with your right hand, and turn your left hand 90 degrees. This way, the cross-sections on both sides of the cut dough pieces are smooth.)

14.Put the cut dough in the palms of your hands and press it into a round shape.

15. Roll the dough into dumpling wrappers with thick center and thin edges.

16. Put a little stuffing on the dough, knead it and wrap the dumplings.

17. Pour a little oil into the pot, turn the pot to make the oil evenly spread on the bottom of the pot, heat it up, and place the dumplings.

18. Mix a little flour and warm water into a uniform noodle soup, pour it along the edge of the pot, turn to medium heat, cover, and fry until the bottom of the dumplings is golden and crispy. Turn off the heat and use a spatula to gently lift up from the edge, and you will see beautiful hollow ice flowers.
