How to cook snow vegetable fried intestines

1. First, rinse the fresh pig large intestine inside and out, then rub it with salt and flour for a while, tear off the excess intestinal oil and fat, and wash it again with clean water; add rice wine, salt, and ginger slices to a pot of boiling water, boil it again, put the large intestine in and blanch it for a few minutes, pour out the boiling water, take out the large intestine and wash it with clean water. Then, put it into the pressure cooker, pour in clean water to just cover the large intestine, add 2 spoons of light soy sauce, 1 spoon of soybean paste, 1 spoon of sugar, half a spoon of salt, 3 spoons of rice wine, 2 big spices (star anise), 3-4 bay leaves, cover and cook on high heat for 15-18 minutes and then turn off the heat. Remove from the heat and set aside.

2.1 Heat the pan and pour in oil. Stir-fry chopped green onion, ginger, garlic and chili peppers over medium heat.

3.2 Soak the pickled snow vegetables in clean water for a few minutes to remove some of the salty and sour taste, squeeze out the water, and cut into shreds; cut the cooked pig large intestine into circles; prepare chopped onion, ginger, garlic, chopped chili peppers, and cut green garlic into sections.

4. Turn on high heat, first pour in the snow vegetable and stir-fry, then pour in the large intestine and stir-fry, add a little salt, sugar, cooking wine, and chicken essence, stir-fry evenly, drizzle with sesame oil, turn off the heat and serve.

5. Sprinkle with chopped green onions and serve.

6. The taste is first-rate, the sour and spicy pickled mustard greens and fried large intestines will increase your appetite!
