1. Keep a bag of Cross-Bridge Rice Noodles aside.

2. Chop 1/4 chicken into pieces and clean. Wash the green onions and set aside.

3. Boil water in a pot, blanch the chicken pieces, remove and drain the blood, and set aside.

4. Heat oil in a pan, add chicken pieces and stir-fry.

5. Add appropriate amount of soy sauce, water and scallion segments and bring to a boil.

6. Cook over medium-low heat for a few minutes, add chopped green onion and set aside.
