Italian vegetable pancake recipe

1.1 Wash the tomatoes, cut them in half, remove the stems, and cut them into small pieces. Use a knife to remove the juice-containing inner core, leaving only the thick skin of the tomato, and cut it into small pieces for later use. (You can eat the tomato juice directly, or add some sugar to mix it. Don’t waste it.

2.2 Break the broccoli into small florets, wash them, blanch them in boiling water for 2 minutes until cooked, remove them from the water, rinse them with cold water, drain them and chop them into small pieces. Chop onion and cilantro

3. Beat the eggs, add salt, dried basil, black pepper and mix well

4. Mix broccoli, tomatoes, onions, cooked corn kernels, coriander and egg liquid together.

5. Pour into a high temperature resistant baking bowl (or 8-inch non-stick baking pan), fill 3/4 full, then sprinkle with a thick layer of grated cheese.

6. Preheat the oven in advance, place the baking bowl in the middle layer of the oven, and bake at 250 degrees for about 12-15 minutes. If the time is up but the surface of the cheese has not turned golden, continue heating it for a while, but do not leave the oven, observe the color of the cheese at all times, and do not leave it for too long, otherwise it will burn. After baking, eat it while hot
