Method 1:

1. Ingredients for the starter: 200g flour, 200g water, 10g sugar, 2g yeast

2. Mix all the ingredients and stir evenly with a rubber spatula or chopsticks (don't use your hands, it's too sticky). Cover with plastic wrap and refrigerate.

3. Take out the refrigerated dough and continue to ferment at room temperature until it becomes honeycomb-like

4. Add 100g flour and 3g salt to the main ingredients

5. Mix well with a rubber spatula and put in the refrigerator to continue fermentation

6. The next day, take out the fermented dough and return to temperature for 20 minutes

7. Brush oil on the silicone plate, dip your hands in oil, and pat the dough into long strips

8. Cut into segments with a scraper

9. Stack the two sections together and press a mark on them with chopsticks or a scraper.

10. When the oil is about 50% to 60% hot, put the dough into the oil (test the oil temperature: put a small piece of dough into the oil. If bubbles appear around it and it floats up quickly, it is done)

11. Fry until both sides are golden brown.

Method 2:

1.Mix yeast with water in advance.

2. Beat the eggs, pour in the yeast water and salt and beat with an egg yolk.

3. Add flour.

4. Stir with chopsticks first.

5. Apply oil on your hands and knead the dough evenly to prevent your hands from sticking. Apply a layer of oil on the surface and cover with a damp cloth or plastic wrap to ferment.

6. When the dough has doubled in size, open it and it will form honeycomb holes.

7. Do not knead the risen dough. Move it to the chopping board and stretch it into long strips.

8. Break into small pieces.

9. Stack the two strips together and press down from the middle with chopsticks.

10. Hold one end with each hand and stretch it out, then put it into a pan of oil that is 70% hot.

11. Fry over low heat until golden brown and remove from the heat.

12. Delicious.

Tips:

The dough for fried dough sticks cannot be made too hard, as this will affect its fluffiness. Since the water absorption of flour is different, you need to adjust it yourself when kneading the dough. The fermentation time depends on the temperature. The higher the temperature, the faster it will ferment, and vice versa. In short, the dough cannot be fried if it is not well fermented.
