I believe many of my friends in the south have eaten water chestnuts. The flesh of water chestnuts is tender, crispy and delicious. Water chestnuts not only have high nutritional value but also have certain medicinal value. They have the effects of clearing toxins, treating sores, nourishing the spleen and replenishing qi. There are many dishes made with water chestnuts, such as water chestnut, barley and osmanthus porridge, braised pork with water chestnuts, and salted water chestnuts, which are all delicious.

Soak coix seeds for two hours in advance, soak white rice for half an hour, cut raw water chestnuts into small pieces, and mash the cooked water chestnuts into powder (if they are particularly dry and difficult to grind, add hot water for cooking porridge to make them into a paste); add water and bring to a boil, pour in the cooked water chestnut powder (or water chestnut paste), stir well and then pour in the raw water chestnut grains; cook until coix seeds and water chestnuts are cooked, sprinkle in dried osmanthus (or osmanthus sugar), stir slightly and turn off the heat.

Ingredients for braised pork with water chestnuts: water chestnuts, pork belly, ginger slices, chopped green onions, salt, sugar, light soy sauce, dark soy sauce, and cooking wine. Crack the water chestnuts into shells and soak them in water with ginger slices. Blanch the pork belly and set aside. Heat oil in a pan and stir-fry the ginger slices and chopped green onions until fragrant. Add the drained pork belly and stir-fry until oil comes out. Pour in cooking wine, light soy sauce, dark soy sauce, and sugar to color the pork belly. Pour in boiling water and simmer on low heat for about 30 minutes. Add water chestnuts and salt. Then simmer for about 30 minutes on low heat, then turn up the heat until the sauce thickens and serve.

Salted Water Chestnut

Soak the water chestnuts in clean water for about half an hour, wash off the dirt on the surface of the water chestnuts, put them in a pot, pour in clean water (the amount of water should just cover the water chestnuts), and bring to a boil over high heat. After the water boils, pour in salt and ginger slices, cover the lid and cook on medium heat for about a quarter of an hour. When it is cooked, you can remove it from the pot, drain the water and eat it. Ingredients: 500g water chestnuts, 2g salt, and 2 large slices of ginger.
