12. Simmer until volume doubles, about 2-4 hours. Preheat the oven to the highest temperature, spray with water, push the dough in, bake at 220 degrees for about 20 minutes, then at 180 degrees for about 10-15 minutes. Notice! Because the bread is not cut into pieces, it will grow significantly in volume during baking, growing taller and perhaps closer to the heat source of the oven. In that case, the surface of the bread is likely to start to become burnt in a very short time. Be sure to watch it while baking. Once the color is right, put some tin foil on it and continue.
