Learn to cook home-cooked dishes

China's diet is relatively rich. Although more and more people are starting to eat out, eating out is not as hygienic as cooking at home. Therefore, it is still necessary to learn how to cook some home-cooked meals. People's favorite home-cooked dishes include Mapo Tofu, Hot and Sour Shredded Potatoes, and Scrambled Eggs with Tomatoes. Below we will introduce to you in detail the methods of making these three home-cooked dishes!

1. Mapo Tofu

Ingredients: diced tofu, minced beef, bean paste

Seasoning: salt, wine, chopped dried red pepper, green garlic, minced ginger, pepper powder, water starch, soy sauce, a little sugar

practice:

1. Add a little vegetable oil to the pot and heat it over high heat. When the oil is hot, add bean paste, salt, dried red pepper, green garlic, minced ginger, pepper powder, and minced beef in turn. You can also marinate the minced beef with the above seasonings and add it together. Saute until fragrant.

2. Add tofu cut into small pieces. Reduce heat and bring to a boil.

3. When the tofu is cooked, turn to high heat and add the sauce made from water starch, sugar, wine, MSG and soy sauce. After the sauce is evenly attached, turn off the heat and remove from the heat.

4. Remove from heat, sprinkle with pepper powder, and the fragrant, Sichuan-flavored Mapo Tofu is ready to serve!

2. Spicy and Sour Potato Shreds

Ingredients: Potatoes

Seasoning: chili pepper, peppercorns, garlic

practice:

1. Peel the potatoes and cut them into strips. The thinner the better. It takes skill to cut the green and red peppers into strips. Dice the garlic.

2. Cut the potato shreds and rinse them with cold water to remove the starch, so that the fried dishes will have a crispy texture.

3. Prepare salt and white vinegar. Using white vinegar will make the dishes look clean.

4. Turn on the fire, put the wok on, and add oil.

5. When the oil is warm, put the peppercorns in and fry until fragrant.

6. Be sure to remove the peppercorns, otherwise you will know when you eat it.

7. When the oil is hot, add the chili strips and garlic and fry until fragrant.

8. Pour in the prepared shredded potatoes and stir-fry for a few times.

9. Add white vinegar.

10. Add salt quickly.

11. Stir-fry a few more times to make the salt taste more even.

12. When the dish is cooked, place it on a plate and shape it. A plate of sour, spicy and crispy shredded potatoes can be served.

3. Scrambled Eggs with Tomatoes

Ingredients: tomatoes, eggs, chopped green onions, tomatoes. Seasonings: vegetable oil, salt, sugar.

Note: There is no need to add chicken essence or MSG to scrambled eggs with tomatoes, because scrambled eggs with tomatoes are meant to be eaten with a fresh taste, and when scrambled eggs with tomatoes are cooked, substances that create a umami taste are precipitated, so there is no need to add MSG or chicken essence to enhance the flavor. This is also the reason why ginger and garlic are not added when making this dish.

Production process

1. Cut the tomatoes into pieces of different sizes and shapes. Cut the green pepper into small diamond-shaped pieces. Crack the eggs and put them in a bowl with a little warm water. Beat them well and add a little salt. If you prefer a strong taste, don't add salt.

2. Put an appropriate amount of oil in the pan (the amount of oil is critical when frying eggs. My experience is to put 2/5 of the egg liquid in it). When the oil is hot, pour in the egg liquid. Note that at this time, the egg liquid will naturally solidify. Do not move. Wait until the egg liquid is solidified (be careful that the oil dries up and causes the egg to be mushy). Use a spatula (also called a frying spoon) to gently enter from the edge of the egg, turn the egg over, fry it, and when both sides are golden brown, gently separate the eggs with a spatula. Do not mash them deliberately. Then take the eggs out of the pan (you can also choose not to take them out, but wait until you are proficient in it). There should be some oil in the pan at this time. Add chopped green onions and stir-fry until the flavor comes out. Put the chopped tomatoes into the pan. Since tomatoes contain a lot of water, water will precipitate. When the water in the tomatoes has not completely come out, put the scrambled eggs in, add a little salt, stir-fry a few times, and serve.
