Whole wheat oatmeal bread recipe

1. First, heat the water until it feels warm, then add the yeast and stir evenly. Then add the flour and stir at a slow speed until it forms a dough. Put it into a container, cover it with a film, and ferment it in a warm environment for 2 hours. 2. Mix the dough fermented in step (I) with material B, and stir it at medium speed to make a more extensible dough. 3. Add unsalted butter and continue to stir at medium speed to make a more extensible dough that can be stretched into a film. 4. Place the dough in a container, cover with plastic wrap, and allow to ferment for a second time in a warm environment for 50 minutes. 5. After fermentation, divide the dough into 3 equal parts (this is a small test), roll into a ball, cover with plastic wrap and let it relax for 10 minutes.

2. Second, shaping: slightly press the small dough to release air, then roll it into a ball.

4. Roll up the dough from one side.

5.Pinch the opening tightly.

6. Roll the dough a few times on the chopping board.

7. Brush the dough with egg white and roll it on a plate of oatmeal so that the entire surface is covered with oatmeal.

8. Cover with film and allow for final fermentation for 25 minutes.

9. Use scissors to cut three evenly spaced cuts at a 45° angle on the surface of the dough (as shown in the figure).

10. Baking: 1. Place a pot on the bottom layer of the oven and put about a cup of water in it. 2. Place the dough into the middle layer of the heated oven at 300F for about 20 minutes.

11. The finished product picture shows that the internal structure is also quite delicate and soft.
